We do it this way because we believe in the kind of food that doesn’t need dressing up. When things are made with care and quality local ingredients, you don’t have to hide the process. You can invite people into it and share in the beautiful process of creation.
It’s not a gimmick but helps to keep us accountable. Customers can see exactly what goes into their dough. They can watch how long we rest each loaf, or how many times we laminate each croissant. And if someone has a question, we’re right there to answer it. We might be covered in flour, but we’re happy to talk and be open with our community.
