Nick’s arrival marks a turning point for this 2 Chef Hat destination.  With more than 15 years in some of Australia’s most acclaimed kitchens – Society, Cecconi’s, The Bentley – and an elite apprenticeship under Brett Graham, his food is driven by precision, provenance and creativity.  “This feels like a natural homecoming,” Nick said.  “There’s a rhythm here – of land, produce and community – that inspires every plate.”

Menus spotlight seasonal ingredients sourced from local growers, foragers, and Lindenderry’s own garden.  Signature dishes like torched Abrolhos scallops with XO sauce, or quail smoked tableside with rosemary and wild mushrooms, marry European finesse with bold Australian character.  Guests can choose between Nick’s seasonal tasting menu or a curated à la carte selection on weekdays, each thoughtfully paired with Lindenderry’s award-winning estate wines or its globally curated list.

Your host Alyssia Watson, a seasoned restaurant manager, is known for her calm leadership and intuitive service.  Her ethos is hospitality without pretence: warm, polished, and personal.
